On the PODERE POGGIO SCALETTE, about a thousand olive trees are grown, most of which are centuries old.
They are mainly found in the company body located at an altitude between 350 and 450 m (plot “Il Corto”), which naturally prevents the development of any diseases, and – consequently – no treatment of the plants is necessary.
The olives, of the Moraiolo, Leccino and Frantoio varieties, are hand-picked starting in November, when they have reached the right level of ripeness, which guarantees the extra virgin olive oil thus obtained, its natural and rich fragrance and the characteristic savouriness of the flavour, typical of the extra virgin olive oil from the Chianti Classico hills.
Within a very short period of time (3-4 days) the olives are taken to the Frantoio, where the pressing and cold extraction take place, which allow us to obtain a product of the highest quality, which is then carefully protected from the harmful effects of light and oxygen.
