Ser Mariotto Cofani, Arezzo nobleman from the 1400s. Legend has it that he donated a chest to the Fraternita dei Laici. The painting depicting him is still in the museum of Palazzo di Fraternita. From our best selection of Sangiovese and Cabernet Sauvignon grapes, hand-picked at perfect ripeness, our Chianti Riserva is born. In the vineyard, thinning and early leaf removal allow the production of a very structured wine. The slightly late harvest is carried out by hand. Spontaneous fermentations, with indigenous yeasts, take place at a controlled temperature for approximately 18 days. After an initial passage in steel, the wine continues its maturation in oak barriques for at least 16 months. The wine then finishes its refinement in the bottle.
